Content of other Quarters may vary from these figures due to variations in individual animals (ie: carcass size & condition, cutting specs) Also, our Quarters are actually half of Sides containing front and hind quarter cuts. Hanging weights are determined by taking the full carcass weight and dividing by 2 or 4 to arrive at the hanging Side or Quarter weight respectively.
